Spinach Salad from Judy Langworthy

I made this on Father's Day and it was so yummy. Now is a good time to try it since it is Strawberry season.

1 batch of dressing
1 pound bagged pre-washed baby spinach (regular lettuce would be fine too or a mixture)
1 cup slivered almonds, toasted
1 Cup sliced strawberries
1/2 cup crumbled feta cheese

Make dressing first and have it standing by.
Put spinach in a big bowl. Pour on dressing and toss.
To with strawberries, almonds and feta. Serve immediately

If you don't think you will eat it all at one serving, serve the dressing on the side or mix up in individual bowls.

Sweet poppy seed vinaigrette dressing
1/2 cup splenda
1/4 cup white wine vinegar
3 T olive oil
2 tsp minced red onion
1 1/2 tsp poppy seeds
1/4 tsp salt
(1 tsp paprika, optional)

Hope you love it!
Carol
