Melanie's Buttermilk Pancakes with Best Bites Buttermilk Caramel Syrup

Ingredients:
3 cups flour
3 Tablespoons white sugar
3 teaspoons baking soda
3/4 teaspoon salt

3 cups buttermilk
1/2 cup milk
3 eggs
1/3 cup butter, melted

Directions:

1. In a large bowl, combine flour, sugar, baking powder, baking soda, and salt. In a separate bowl, beat together buttermilk, milk, eggs and melted butter. Keep the two mixtures separate until you are ready to cook.
2. Heat a lightly oiled griddle or frying pan over medium high heat. You can flick water across the surface and if it beads up and sizzles, it's ready!
3. Pour the wet mixture into the dry mixture, using a wooden spoon or fork to blend. Stir until it's just blended together. Do not over stir. Pour or scoop the batter onto the griddle, using approximately 1/2 cup for each pancake.

Syrup

3/4 cup buttermilk
1 1/2 cup sugar
1/2 cup real butter
2 T corn syrup
1 tsp baking soda
1 tsp vanilla

1. Combine buttermilk, sugar, butter, corn syrup and soda in a pan 4 quart pan.
2. Bring mixture to a boil and reduce to low just make sure it's still boiling a little.
3. Cook, stirring frequently 7-9 minutes until golden brown.
4. Stir in vanilla.

You wouldn't want to start every day this way but it is sure delicious for a treat, like Conference Sunday. Even though Dad is a loyal fan of Mrs. Butterworth, he did love this syrup. It claims to be one of the most popular recipes in my Best Bites cook book.
